Hatch Chile Gazpacho

It's always fun to see someone who never heard of Hatch chiles become aware of them and fall in love with them. Such was the case with one of my foodie friends, Natasha, Five Star Foodie. Living on the east coast, she'd never seen Hatch chiles before but was lucky enough this year to find them at her local grocery store.
She bought a few to try them, making a refreshing Hatch Chile Gazpacho to help keep her cool in the summer heat.

We have another Hatch-happy person! She liked them so much
that she bought more chiles... that's just what happens with
Hatch chiles.

  1. It's true, I am a Hatch-happy person for sure :) This weekend I made salmon with Hatch chile pepper sauce and cheesy Hatch chile corn muffins (hope to post those later this week). Thanks so much for posting the gazpacho here!
