Hatch Huevos Rancheros

Hatch chiles are so good, you want them for breakfast, lunch, dinner, and snacks. Alex, Recession Recipes, scored one of the
last five sacks of roasted chiles from his local grocer. Good thing
he got up early to go grocery shopping. When he got home, he made Hatch Huevos Rancheros for breakfast.

Since Alex has 1-1/8 bushels of Hatch green chiles, he plans on making a lot of Hatch recipes.
