Hi Spryte... Yes to both questions. Hatch chiles are probably the best chiles, with the best flavor and bite. They're only available for a limited time in August and September. I'll be doing a post in the next few days about the history of Hatch chiles with links to more information.
Hi Spryte... Fresh is always best. I've used the canned Hatch enchilada sauce before; it's good, but now that I've had the real thing, I can tell you that there's a HUGE difference.

ReplyDeleteAre Hatch Chiles a specific variety of chile? Or are they simply chiles grown in Hatch?

ReplyDeleteI've seen them canned at the grocery store... since canned is the only variety available to me... will I be able to notice a difference if I try them?
